Worcestershire Spice is a dry Worcestershire seasoning, savoury, tangy and deeply umami, built on smoked paprika, tomato, onion and garlic. It gives you everything the sauce does, in a form that will not run off the meat.
Worcestershire has been in the back of every family fridge door for a hundred years, usually with the label half peeled off. This is that flavour brought forward and made useful again, seasoning meat instead of rolling off it, and quietly improving a shepherd’s pie in the process.
Serve it with steak, burgers, beef ribs, mince, pies, stews, slow cooked beef, hot chips and a Bloody Mary.
Divide 500g of beef mince into four loose balls and do not season them yet. Get a heavy pan smoking hot, press each ball flat with a spatula and hold it for ten seconds. Season the top heavily with Worcestershire Spice, flip after two minutes, top with cheese, and cook one minute more. Build with pickles and a soft bun. The crust is the whole point.
