Slow-Simmered Spiced Bolognaise

Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 500 g beef or pork mince (or a mix)
- 2 tbsp tomato paste
- 1 cup red wine or beef stock
- 2 x 400 g tins crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp smoked paprika
- 1/2 tsp chilli flakes (optional)
- Salt and pepper, to taste
- 400 g pasta of choice, cooked
- Grated parmesan and fresh herbs, to serve
Instructions
- Heat olive oil in a large pan. Sauté onion, garlic, carrot and celery until soft.
- Add mince and cook, breaking it up, until browned.
- Stir in tomato paste and cook 1 minute, then pour in wine or stock and simmer until reduced by half.
- Add tomatoes, oregano, basil, smoked paprika, chilli, salt and pepper.
- Reduce heat and simmer gently 30–45 minutes, stirring occasionally, until thick and rich.
- Toss with hot pasta and serve with parmesan and herbs.
