Slow-Simmered Spiced Bolognaise

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 500 g beef or pork mince (or a mix)
  • 2 tbsp tomato paste
  • 1 cup red wine or beef stock
  • 2 x 400 g tins crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp smoked paprika
  • 1/2 tsp chilli flakes (optional)
  • Salt and pepper, to taste
  • 400 g pasta of choice, cooked
  • Grated parmesan and fresh herbs, to serve

Instructions

  • Heat olive oil in a large pan. Sauté onion, garlic, carrot and celery until soft.
  • Add mince and cook, breaking it up, until browned.
  • Stir in tomato paste and cook 1 minute, then pour in wine or stock and simmer until reduced by half.
  • Add tomatoes, oregano, basil, smoked paprika, chilli, salt and pepper.
  • Reduce heat and simmer gently 30–45 minutes, stirring occasionally, until thick and rich.
  • Toss with hot pasta and serve with parmesan and herbs.
