The all rounder, no salt added
The Portuguese Heritage Blend is a salt free, smoked paprika based all purpose seasoning for chicken, seafood, pork and vegetables. Smoked paprika leads. Allspice, nutmeg and clove warm it. Dried lemon zest and oregano lift the finish.
This is Chantelle’s own recipe, written down years ago and adjusted almost every year since. Portuguese cooking has always been about a few good things done well, and that is the whole idea here. With no salt in the jar, you season to your own taste and let the spice do the flavour, which is why it works just as happily on grilled fish as it does on a Sunday chicken.
Serve it with roast chicken, prawns, firm white fish, pork, chorizo, rice dishes, roast potatoes and charred capsicum.
Try this: Portuguese Roast Chicken.
Mix two tablespoons of the blend with three tablespoons of olive oil, the juice of half a lemon and two crushed garlic cloves. Rub it under and over the skin of a spatchcocked chicken and leave it in the fridge for two hours or overnight. Roast at 200C for forty five minutes, basting twice, until the skin is deep red and crisp. Squeeze over the other half of the lemon before it hits the table.
