The Providore Biscotti is a twice baked biscotti with whole macadamias and seventy per cent dark chocolate through a brown sugar and vanilla bean base, finished with flaked sea salt. It is the most serious thing we bake.
The salt lands before the chocolate does, which is the whole trick of it. This is the one for the end of a long dinner, when the plates are cleared, the wine is still going and nobody has moved yet.
Serve it with a hard cheddar, blue cheese, port, red wine or a very good espresso.
