Every family has one. He has opinions about coals, he does not need help, and he will stand out there in the dark turning things over long after everyone else has gone inside. This is the box for him, and it is a great deal better than another pair of tongs.
Serve it with a rib eye, lamb chops, beef short ribs, boerewors or a whole butterflied chicken. Then the biscotti with a strong coffee or a glass of something dark, standing up, near the fire, while the last of the coals go out.
Try this: the whole evening in four steps. Rub Andy’s Braai Rub generously into two thick sirloins and leave them on the bench for an hour. Cook them hard over medium coals, five minutes a side, and rest them ten minutes on a warm plate. Warm the Rogue Woodfire Whisky Sauce in a pan with the resting juices and pour it over as you serve. Then put The Providore and the Old Tin Ginger out with the coffee, and do not offer anyone a plate.
