The Entertainer’s Dream is our largest gift box, a seven piece set that covers a grazing board, a fire, a table and a dessert plate. This is the box for the person who says yes before they have thought about it. Somebody drops in, the weather turns good, a birthday gets remembered late. There is a certain kind of kitchen where none of that is a problem, and it is never because the cook is fast. It is because the cupboard is right.
How the box runs an evening:
Start with the board, the dukkah in a bowl with good oil and the marmalade next to a hard cheese and the blue cheese, with The Old Tin Ginger standing up beside it. Move outside, where the braai rub is already on the meat and the whisky sauce is waiting in the pan. Finish at the table with The Celebration and The Providore, coffee, and whatever is left in the glass. Three biscotti is deliberate. One belongs on the board, two belong at the end, and nobody has to choose.
Try this: a whole menu from one box:
Board first: warm sourdough bread, a pool of olive oil with two tablespoons of dukkah, a wedge of aged cheddar. Then, the Old Tin Ginger Biscotti, a wedge of blue cheese and a spoonful of red onion marmalade.
Main: three tablespoons of Andy’s Braai Rub worked into a butterflied leg of lamb, an hour on the bench, thirty five minutes over coals, rested fifteen, with the whisky sauce warmed through the resting juices.
Dessert: The Celebration with mascarpone and raspberries, Old Tin Ginger with the coffee. Seven products, three courses, one box.
