Old Tin Ginger Biscotti is a twice baked ginger biscotti made with ground spices and golden syrup, giving it a dark edge and a ginger bite that builds rather than shouts.
Every grandmother had a tin, it was never actually a biscuit tin, and you were never allowed to open it yourself. This tastes like the inside of that tin, which is to say like a kitchen in the middle of winter.
Serve it with blue cheese and figs, strong black tea, coffee, mulled wine or baked apples.
Try this Ginger biscotti poached pears:
Simmer four peeled pears in a cup of red wine, a cup of water, half a cup of sugar, a cinnamon stick and a strip of orange peel for twenty five minutes until tender. Reduce the liquid to a syrup. Serve each pear with the syrup, a spoon of thick cream and a crumbled ginger biscotti over the top for crunch.
