Cilantro Leaves (Dried)

The Herb That Finishes the Dish

Some ingredients build the base and some bring the whole thing to life at the very last moment. Dried cilantro leaves, known in most Australian kitchens as coriander leaves, are the finishing touch that turns a good curry, salsa or soup into something people ask you about. Grandma always kept a jar within arm’s reach of the stove, because the best flavour is the one you add just before you serve.

Flavour Profile

Bright, citrusy and gently grassy with a soft peppery lift. Drying tames the sharp, soapy edge that fresh coriander can carry, leaving a mellower, more herbaceous flavour that folds into cooked dishes beautifully. The aroma is clean and green, closer to fresh lime zest and parsley than to the warm, nutty coriander seed it comes from.

How to Use It

Dried cilantro leaves are best added late. Stir them through towards the end of cooking or scatter over the finished dish so the volatile oils stay where you want them. As a rough guide, use one teaspoon of dried cilantro leaves in place of one tablespoon of chopped fresh coriander. If you want the flavour to bloom, rub the leaves between your palms as you add them, or soak them for a minute or two in a little lime juice, olive oil or warm stock before stirring through. They pair naturally with cumin, garlic, chilli, lime, spring onion, coriander seed and smoked paprika, and they belong in any pantry that leans towards Mexican, Indian, Middle Eastern or South East Asian cooking.

Recipes Where Cilantro Leaves Shine

Dried cilantro leaves lift a homemade Guacamole with fresh, citrusy brightness that cuts straight through rich avocado. They finish a Chicken Tikka Masala or any tomato based curry with the green note that ties the spices together, and they are essential stirred through a Coriander and Lime Rice served alongside slow cooked beef or grilled fish. Add them to a Fresh Tomato and Chilli Salsa for tacos and nachos, or fold a generous pinch through a Spiced Lentil and Coconut Soup just before serving for a finish that tastes like it took far more effort than it did.
