Andy’s Braai Rub was never meant to be a product. It was made for one man’s fiftieth birthday, blended by hand and pressed into little jars for everyone who came to celebrate around the fire. People kept asking for more. That is how the best recipes tend to announce themselves, and it is why this is the first jar we put our name to.
This is a proper South African braai rub, balanced the way a braai master would want it. Coarse sea salt and cracked pepper do the seasoning, unrefined coconut sugar brings a slow molasses caramelisation that crusts beautifully over coals, and a double hit of smoked and sweet paprika carries the warmth all the way through. Underneath sits an aromatic layer of toasted, earthy spices and garden herbs, with a whisper of tang and just enough cayenne to make itself known without ever taking over. It is deeply savoury, gently sweet, unmistakably smoky, and it tastes like a Saturday afternoon that ran long.
Andy’s Braai Rub is generous and forgiving, which is exactly what you want when the fire is already going. Rub it into beef, lamb, pork, chicken or boerewors and give it thirty minutes to draw before it hits the grill, or leave it overnight in the fridge for a heavier crust and deeper flavour. Add a light coat of olive oil first so it clings and caramelises rather than scorching. It is every bit as good away from the coals. Toss it through potato wedges before roasting, work it into burger mince, season a whole chicken before it goes into the oven, dust it over grilled corn or halloumi, or stir a spoonful into softened butter and let it melt over a rested steak. Roughly one teaspoon per 250g of meat is a good starting point, then adjust to your own taste.
