
Rustic Apple Pie

Ingredients
- 2 Sheets shortcrust pastry (or your favourite pie crust)
- 6 Medium apples, peeled, cored, sliced
- 1/2 cup white Sugar
- 1/4 cup brown Sugar
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves (optional)
- 2 tbsp plain flour
- 1 tbsp lemon juice
- 40 g butter, cut into small cubes
- 1 Egg, beaten, for brushing
- 1 tbsp extra sugar, for sprinkling
Instructions
- Preheat oven to 190°C. Line a pie dish with one sheet of pastry, letting it overhang slightly.
- In a large bowl, toss apple slices with sugars, cinnamon, nutmeg, cloves, flour and lemon juice.
- Tip apples into the pastry shell and dot with butter.
- Cover with the second sheet of pastry, trim and crimp edges to seal, then cut a few small slits on top.
- Brush with beaten egg and sprinkle with extra sugar.
- Bake 40–50 minutes, until the crust is golden and the filling is bubbling. Cool slightly before slicing.
