Rustic Apple Pie

Ingredients

  • 2 Sheets shortcrust pastry (or your favourite pie crust)
  • 6 Medium apples, peeled, cored, sliced
  • 1/2 cup white Sugar
  • 1/4 cup brown Sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 2 tbsp plain flour
  • 1 tbsp lemon juice
  • 40 g butter, cut into small cubes
  • 1 Egg, beaten, for brushing
  • 1 tbsp extra sugar, for sprinkling

Instructions

  • Preheat oven to 190°C. Line a pie dish with one sheet of pastry, letting it overhang slightly.
  • In a large bowl, toss apple slices with sugars, cinnamon, nutmeg, cloves, flour and lemon juice.
  • Tip apples into the pastry shell and dot with butter.
  • Cover with the second sheet of pastry, trim and crimp edges to seal, then cut a few small slits on top.
  • Brush with beaten egg and sprinkle with extra sugar.
  • Bake 40–50 minutes, until the crust is golden and the filling is bubbling. Cool slightly before slicing.
