Herby Baked Eggs with Tomato & Avocado

Ingredients

  • 1 tbsp olive oil
  • 1 Small onion, finely sliced
  • 1 cup baby spinach or other greens
  • 1 Small avocado, sliced or diced
  • 1 cup chunky tomato sauce or passata
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp chilli flakes (optional)
  • Salt and pepper, to taste
  • 4 Eggs
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • Toasted bread, to serve

Instructions

  • Preheat oven to 180°C. Heat olive oil in an ovenproof pan and gently cook onion until soft.
  • Add spinach and cook until just wilted. Stir in avocado, tomato sauce, oregano, basil, chilli flakes, salt and pepper.
  • Simmer 2–3 minutes, then make 4 small wells and crack an egg into each.
  • Sprinkle cheese over the top and transfer pan to the oven.
  • Bake 8–12 minutes, until whites are set and yolks are cooked to your liking.
  • Serve hot with toasted bread for dipping.
