
Herby Baked Eggs with Tomato & Avocado

Ingredients
- 1 tbsp olive oil
- 1 Small onion, finely sliced
- 1 cup baby spinach or other greens
- 1 Small avocado, sliced or diced
- 1 cup chunky tomato sauce or passata
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp chilli flakes (optional)
- Salt and pepper, to taste
- 4 Eggs
- 1/2 cup grated cheese (cheddar or mozzarella)
- Toasted bread, to serve
Instructions
- Preheat oven to 180°C. Heat olive oil in an ovenproof pan and gently cook onion until soft.
- Add spinach and cook until just wilted. Stir in avocado, tomato sauce, oregano, basil, chilli flakes, salt and pepper.
- Simmer 2–3 minutes, then make 4 small wells and crack an egg into each.
- Sprinkle cheese over the top and transfer pan to the oven.
- Bake 8–12 minutes, until whites are set and yolks are cooked to your liking.
- Serve hot with toasted bread for dipping.
