Grandma's Special GF Cookies

The cookie that holds together, has a proper chew and tastes like it was made without any compromises - because it was. The GF Cookie Mix is the base. Everything that goes into it next is up to you. Chocolate chips and sea salt is the version people ask for the recipe for.

Ingredients

INGREDIENTS

  • 500 g Grandma's Pantry GF Cookie Mix
  • 125 g caster sugar
  • 125 g butter
  • 1 egg
  • Up to 1.5 cups of your favourite additions - chocolate chips macadamias, dried fruit, etc

Instructions

Mix

  • Mix the dry ingredients together. Rub the butter into the dry ingredients until combined. Add the vanilla essence and egg and mix well. Add your chosen additions and fold through gently. Better to undercook than overcook - chewy is good.

Bake

  • Spoon onto a lined baking tray and bake at 180 degrees C for 20-25 minutes. Watch carefully in the final 5 minutes.

Notes

VARIATIONS
CHOCOLATE CHIP AND BLACK GARLIC HONEY: Add 1 cup GF dark chocolate chips and replace the sugar with Noosa Black Garlic Honey. The honey brings a caramel depth that makes these extraordinary.
MACADAMIA AND WHITE CHOCOLATE: Add 0.75 cup roughly chopped macadamias and 0.5 cup white chocolate chips. Finish with a small pinch of Olsson's Red Gum Smoked Salt on each cookie before baking.
SHORTBREAD VERSION: Use 1kg cookie mix with 250g sugar and prepare on low speed for 3-4 minutes. Preheat oven to 210 degrees C, 200 degrees C fan forced. Bake for 10-11 minutes until golden.
