
Grandma's GF Savoury Muffins
The savoury muffin that solves lunchboxes, morning teas and impromptu visitors all at once. A simple GF Self Raising Flour batter with egg, oil and water as the base, then loaded with whatever savoury filling you have on hand. Cheese and ham is the classic. Tapenade, olive and feta is the one that gets requested.

- 250 g Grandma's Pantry GF Self Raising Flour
- 1 small egg
- 250 ml water
- 125 ml oil of your choice
- 125 g savoury filling - ham cheese, olives, sun-dried tomatoes, corn or a combination
- Salt and pepper to taste
Instructions
Prepare
- Preheat oven to 180 degrees C fan forced, or 195 degrees C conventional. Grease a 12-hole muffin tray well.
Mix
- Combine the GF Self Raising Flour, egg, water and oil in a bowl and mix on low speed until just combined - do not overmix. Add the savoury filling and season generously with salt and pepper. Fold through gently.
Bake
- Drop the batter into the prepared muffin tray. Bake for the time indicated, approximately 20-25 minutes, until golden and a skewer inserted in the centre comes out clean. Allow to rest for 5 minutes in the tray before turning out onto a cooling wire.

FILLING IDEAS
CLASSIC: Grated cheddar and diced ham
MEDITERRANEAN: Pukara Black Olive Tapenade and crumbled feta - fold 2 tablespoons of tapenade through the batter and top each muffin with a small cube of feta before baking
SUN-DRIED TOMATO AND BASIL: Chopped sun-dried tomatoes, fresh basil and parmesan
SMOKED SALMON AND CREAM CHEESE: Diced smoked salmon and small cubes of cream cheese
