Grandma's GF Pizza Base

A gluten-free pizza base that actually behaves like a pizza base. Par-baked, frozen and ready to go - or topped fresh and baked straight away. The same GF Artisan Bread Mix delivers a base with enough structure to hold generous toppings without going soggy. Add Pukara Basil Pesto in place of tomato sauce for something worth writing home about.

Ingredients

INGREDIENTS

  • 500 g Grandma's Pantry GF Artisan Bread Mix
  • 10 g dry yeast
  • 350-400 ml water 14-18 degrees C
  • 50 ml oil of your choice
  • Your favourite toppings

Instructions

Mix

  • Dissolve the yeast in the measured water and allow to sit for 5-10 minutes. Preheat oven to 200 degrees C fan forced. Add the bread mix and mix on slow speed until the dough comes together. Add the oil slowly while mixing and continue for 3-4 minutes until fully absorbed. Aim for a dough temperature of 21-24 degrees C.

Shape

  • Roll the dough into balls. Roll out each ball with a rolling pin to your desired base thickness. For a thicker base, allow the dough to rest for 15-30 minutes before rolling. For a thinner, crispier base, roll and bake immediately.

Par-Bake and Freeze

  • Par-bake the bases at 220 degrees C for 8-10 minutes. Allow to cool completely. Freeze ready for use - these bases keep well in the freezer for up to 3 months.

Top and Bake

  • When ready to use, add your favourite toppings to the cooled or frozen base and bake at 220 degrees C until the toppings are cooked and golden.

Notes

PESTO BASE: Try Pukara Basil Pesto spread directly onto the base in place of traditional tomato sauce. Add bocconcini, roasted capsicum and fresh basil. One of the most requested recipes in the Grandma's Pantry kitchen.
TAPENADE BASE: Pukara Black Olive Tapenade spread thinly as a base with Pukara Premium Olives, feta and fresh herbs makes an outstanding white pizza.
