Grandma's GF Muffins

The muffin mix that goes in any direction you point it. A clean, neutral GF batter that works with blueberries and lemon, chocolate chips and orange, apple and cinnamon or anything else the fruit bowl and pantry shelf suggest. One mix, endless variations.

Ingredients

INGREDIENTS

  • 500 g Grandma's Pantry GF Muffin Mix
  • 2 eggs
  • 140 ml oil of your choice
  • 140 ml water
  • Up to 1 cup of your favourite additions - blueberries chocolate chips, raspberries, diced apple, etc

Instructions

Mix

  • Preheat oven to 180 degrees C. Whisk the three wet ingredients together in a bowl, then pour into the premix and combine well. Add fruit or flavourings and mix for 30 seconds. Do not overmix. Spoon into muffin trays.

Bake

  • Bake at 180 degrees C for approximately 20-25 minutes. Cool on a wire rack.

Notes

FLAVOUR IDEAS
LEMON BLUEBERRY: Add 1 cup fresh blueberries and the zest of 1 lemon to the batter. Top with a small pinch of raw sugar before baking.
CHOC CHIP ORANGE: Add 0.75 cup GF-certified dark chocolate chips and the zest of 1 orange.
APPLE CINNAMON: Add 1 cup diced apple and 1 teaspoon cinnamon. A pinch of Grandma's Provisions Ceylon Cinnamon and Citrus Blend in place of regular cinnamon takes this somewhere special.
CHECK FOR GLUTEN: Always check that any added ingredients are certified GF if serving someone with coeliac disease.
