Creamy Herb Baked Fish

This Creamy Herb Baked Fish is a simple one-pan dinner that tastes like a special occasion. Tender white fish is lightly seared, then baked in a silky lemon, garlic and herb cream sauce with green flecks of spinach or kale. It’s rich yet bright, perfect for spooning over fluffy rice, buttery potatoes or for mopping up with crusty bread.

Ingredients

  • 4 firm white fish fillets
  • Salt and pepper
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic minced
  • 1 cup cream or half cream, half milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried dill or mixed herbs
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups chopped spinach or kale
  • Optional: crispy fried shallots to garnish

Instructions

  • Preheat oven to 190°C. Season fish fillets with salt and pepper.
  • In an ovenproof pan, heat oil or butter and quickly sear fish on each side for 1–2 minutes; remove to a plate.
  • In the same pan, gently cook garlic for 30 seconds. Pour in cream, mustard, dill or herbs, lemon zest and juice, and stir.
  • Add spinach or kale and simmer until just wilted.
  • Nestle fish back into the sauce, spooning some over the top.
  • Bake 8–12 minutes, until fish flakes easily. Garnish with crispy shallots if desired and serve with rice, potatoes or crusty bread.
