A recent study on the Glycemic Index (GI) of coconut sugar, illustrated that coconut sugar contained a GI of 35, which would allow us to classify the food as a low GI product.
Low GI food are recommended for proper management of diabetes, cardiovascular diseases, and maintenance of weight.
It is a natural sugar made from the sap, which is the sugary circulating fluid of the coconut plant. It is often confused with Palm Sugar, which is similar but made from a different type of palm tree.
Regular table sugar and corn syrup do not contain any vital nutrients and therefore supply ‘empty calories’. However, coconut sugar does retain quite a bit of the nutrients found in the coconut palm. Most notable of these are the minerals Iron, zinc, Calcium and Potassium, along with some short chain fatty acids, polyphenols and antioxidants that may also provide some health benefits.
Coconut sugar also contains a fibre called Inulin, which may slow glucose absorption and explain why coconut sugar has a low GI than regular table sugar.
