A hard organic wheat with a protein level of approximately 13% or more and moisture content of less than 12%. Easily stored for long periods with its nutritional value intact. USES: Home milling, sprouting and cooking to make a porridge. Use as a rice substitute e.g. side dish, pilaf or risotto.
