Gluten Free Hot Cross Bun Kit

Starches (Maize, Rice), Rice Flour, Modified Starch (1442), Sugar, Soy Flour, Egg White, Iodised Salt, Psyllium Powder, Thickeners (464, 415)
HOT CROSS BUNS
For the buns
1 bag GF Bun Mix
460g Water (18- 20°C)
25g Vegetable Oil
20g Fresh Yeast or 2 tsp dry yeast
125g Mixed Fruit
Add water and oil to bowl, then yeast, Gluten Free Hot Cross Bun Mix, mix for 1 minute on low speed using a beater. Scrape down.
Mix on medium speed for 4-5 minutes. In the last 2 minutes add dried fruit or flavours as desired.
Pour batter into lined or greased muffin pan.
Prove until doubled in size - approximately double the size (approx. 50-60 mins @ 38°C)
Pipe a cross in the centre of each proved bun, if desired. - see below for cross mix recipe.
Before popping them in the oven, brush each bun with a little oil.
Bake at 190°C - 200°C (170°C - 180°C fan forced) for 25-30 minutes or until baked (depending on type of oven and weight).
For the Crosses
125g GF SR Flour
25g icing sugar (optional)
Add water and oil to a bowl, then add flour (and icing sugar mix if desired). Mix for 1 minute on low, scape bowl down.
Mix 3-4 minutes on low until a lump free batter is achieved.
Pour into a piping bag or ziplock (cut the corner out to form a makeshift piping bag) and pipe crosses on your buns!
